Kadhai Aalo (Potato in a wok)

My husband is a big potato aficionado. He will eat anything made of potatoes. So I experiment a lot with this vegetable to make the dish healthy and yummy. Kadhai Aalo is a play on the famous Indian dish Kadhai Paneer (Paneer in a wok).


Potatoes – 5 medium sized

Bell peppers (green, yellow, orange, red) – one each (small size)

Onions – 1 medium sized (finely chopped)

Tomato sauce – 1/2 cup

Green chillies – 2 small sized (more if you want it spicy)

Sesame Oil – 3 tbsp

Ginger – 1 inch grated

Garlic – 1 clove finely chopped

Cumin seeds

Turmeric – 1 tsp

Coriander powder  – 2 tsps

Cumin powder – 1 tsp

Salt to taste

Red chilli powder – 1 tsp (more if you want it spicy)

Garam masala – 1 tsp



How to

Start with heating the sesame oil in the wok and then add the cumin seeds. Once it splutters, add the onions, ginger, garlic, green chillies and then add the spices. Fry in medium heat until the onions are golden brown. Add the tomato sauce and fry some more until the raw smell of tomato is gone. Chop the potatoes into cubes of equal size. Also chop IMG_3958the bell peppers into small square shaped pieces. Add the potatoes to the above mixture and add salt to taste. Cover and cook in medium heat until the potatoes are cooked 3/4th of the way. Add the peppers to this mixture and cook until the potatoes are cooked completely. Sprinkle Garam masala at the end. Serve with chappati or rice and dal. This is a very colorful looking and tasty preparation of potatoes.
