One evening, I wasnt particularly in the mood to cook. But my dearest husband was coming later than usual. So at the last moment, I scrambled to make something for dinner. Hmmm…what do I cook that is easy and yet healthy! I saw lentils lying around…then it hit me…Mujadhara in a single pot! It takes very simple ingredients to make this delicious meal. One pot, one protein and one healthy meal.
Lentils – 1 cup dry or 1 can lentils
Rice – 1 1/2 cup
Onions – 1 medium size (chopped julienne)
Green chillies – 2 (finely chopped)
Garlic – 2 small cloves (finely chopped)
butter – 1/2 stick (you can substitute olive oil if you prefer healthy)
Cumin powder- 1 tsp
Cinnamon – 1 small stick
Bay leaves – 2
Turmeric – 1 tsp
Salt to taste
Add butter (or oil) to the pot and saute garlic until its aromatic. Add the spices and saute for a min. Add the julienne onions to it and continue to saute it until its brown. If the lentils are dry, then soak in warm water for 10 mins prior. Add the rice and lentils to the pot and cover with enough water to soak the mixture. Cover and cook in sim for about 10-15 mins. Check to see if you need more water, and add if needed. Once the rice is cooked, fluff with fork. All done.
