Yummy Potato Fry – South Indian Style

My husband is a big time potato aficionado. IMG_4127I can make potatoes any time and he is really happy. This is one of my favorite potato recipes. It is easy to make and is an excellent accompaniment to Sambhar or Rasam. This has a decent amount of crunchy dals which makes it healthy and tasty. Season it with curry leaves and you’ve got a winner.

Ingredients

Potatoes – 10 (Red or Yellow, not Idaho or Baking)

Red chillies – 2 or 3 (add more if you want more spice)

Handful of Urad Dal

Handful of Chana Dal

Turmeric powder – 1/2 tsp

Chilli powder – 1 tsp

Coconut Oil – 3 tbsp

Curry leaves – 15 (for tempering)

How to

Start with heating coconut oil and add mustard seeds, chana dal and urad dal. Once the mustard seeds sputter, add the red chili spice and the curry leaves.  Add the cut potatoes to the mixture and add the turmeric and chill powder and salt. Fry it for 10-15 mins in slow heat. Be careful not to burn the potatoes. Serve it with Rasam or Sambhar. Bon Appetite 🙂
