Okra Masala (Bhindi Masala)

BhindiMasalaOkra (Bhindi) is a very enigmatic vegetable. It is very tasty when done well and is a great partner at any dinner table. One preparation which is very tasty and easy to make is Okra (Bhindi) Masala. It is a crunchy, spicy (if need be) and a really finger licking preparation.

Ingredients

Crunchy Okra – 25 nos

Onion – 1 (julienne cut)

Tomato – 1 (cut into cubes, optional)

Urad dal – 1 teaspoon

Mustard seeds – 1 teaspoon

Sesame oil – 3 tablespoons

Fennel seeds – 1 teaspoon

Fenugreek seeds – 1 pinch

Turmeric – 1 teaspoon

Red chili powder – to taste

How to

In a wok, heat the oil. Add mustard seeds and let it sputter. After its done, add the fennel seeds, urad dal and brown it up. After that is done, add the onions and fry it until it is golden brown. Remove this mixture out onto a plate and add some more oil. After the oil is hot, add the okra, turmeric and fry until the sliminess is gone. Add salt, and red chili powder to taste. Add the onions and fry for another 2-3 mins. Switch off the heat and add the tomato at the end. Serve hot with chapatti or phulka. Very yummy and satisfying
